I used an Instapot - my new favourite kitchen appliance!
1.5 lbs of sirloin steak cut into thin strips
2 bell peppers thickly sliced - I used green and yellow
1/2 onion thickly sliced
1 clove garlic - minced
1/4 t ground ginger
2 ts brown sugar
1/4 t black pepper
1.5 c beef stock
3 T soy sauce
1 T cornstarch
Combine all ingredients except cornstarch in Instapot (or stove top pressure cooker).
Add lid and make sure it is sealed.
For Instant set pressure to high for 15 minutes. (cook for 15 minutes once steam has built up in stove top cooker).
Allow slow release of pressure (not quick release) for meat that falls apart beautifully.
Remove lid (for Instantpot hit cancel button and switch to sauté mode).
Stir in the cornstarch (well mixed with a 1/4 c cold water) into mixture.
Bring to a boil until the sauce thickens (3-5 minutes).
Serve over a bed of your favourite rice.
