Christmas Curry Beef Hand Pies

Ingredients

1 lb Mitchell Bros ground beef

1 T coconut oil

1/4 c chopped scallion

1 medium onion, chopped

2 garlic cloves, minced

1 carrot shredded

1 t allspice

1/2 t smoked paprika

1.5 T curry powder

1/4 t cinnamon

1 can full fat coconut milk

1 t pomegranate molasses

1 T cranberries (or sultanas)

2 sheets puff pastry

Salt and Pepper

Directions

Brown beef in 1 T coconut oil, remove from pan when browned, set aside

Saute onions, scallions and garlic, add shredded carrots

Add spices to onion mixture and toss to toast

Add coconut milk and cooked beef into mixture

Simmer to develop flavours and reduce liquid - 15 minutes on medium heat

Remove from heat, toss in pomegranate syrup and cranberries and let mixture cool

Roll out puff pastry or use sheets

Cut out 2.5 in rounds

Scoop 1.5 t cooled mixture into centre of rounds, seal dough over mixture (use a dab of water on edges to help seal)

Set on baking sheet and brush tops with whipped egg yolk Bake at 400 for 10-12 minutes or till golden brown Delicious served with your favourite fruit chutney
